What it is
Baerri (often spelled Baerii) caviar comes from the Siberian sturgeon (Acipenser baerii). It’s one of the more approachable, consistently high-quality caviars on the market.

Clean, elegant, mildly briny
Notes of fresh cream, nuts, and sometimes a hint of butter
Softer, more delicate than Oscietra; less intense than Beluga
Texture & appearance
Smaller eggs (usually 2–2.5 mm)
Dark grey to jet black
Silky, slightly tender pop rather than a firm snap
How to serve it well
Keep it simple: blini, crème fraîche, chives
Or go cleaner: potato crisps or warm baby potatoes
Avoid anything overly salty or acidic that will drown its subtler notes
