Price range: $47.00 through $1,175.00 Inc. GST

Description

Baerri caviar is a lovely choice when you want something refined without going all the way into the ultra-luxury tier.

Here’s what’s worth knowing so you can get the most out of it:

What it is

Baerri (often spelled Baerii) caviar comes from the Siberian sturgeon (Acipenser baerii). It’s one of the more approachable, consistently high-quality caviars on the market.

Flavour profile

Clean, elegant, mildly briny
Notes of fresh cream, nuts, and sometimes a hint of butter
Softer, more delicate than Oscietra; less intense than Beluga

Texture & appearance

Smaller eggs (usually 2–2.5 mm)
Dark grey to jet black
Silky, slightly tender pop rather than a firm snap

How to serve it well

Keep it simple: blini, crème fraîche, chives
Or go cleaner: potato crisps or warm baby potatoes
Avoid anything overly salty or acidic that will drown its subtler notes
Very cold, opened right before serving

Wine pairings

Brut Champagne (grower Champagne works beautifully)
Blanc de blancs for something sharper
Chablis or Sancerre if you want still wine
For an indulgent option: aged Riesling with good acidity
