Short ribs meat are a cut of beef taken from the  chuck, plate, or rib areas of beef cattle. They’re made up of the  layers of rib meat and fat.

JMGA (Japanese Meat Grading Association) grades beef based on beef marbling, colour and brightness, firmness and texture, and colour, luster and quality of fat. Under this standard, Furano Black Wagyu Beef is regarded as grade 3 high-quality beef.
